Barley and Sesame Cookie Recipe

Things You Need -

  • ¾ cup of Organic Zing’s Barley Flour
  • ¼ cup of All purpose flour
  • ½ cup jaggery powder or sugar
  • ½ egg
  • ¾ cup of softened butter
  • 1 teaspoon Vanilla extract
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of grated ginger
  • ¼ teaspoon of salt
  • 3 tablespoons of roasted sesame seeds
  • 1 tablespoon of milk

To the Kitchen -

  1. Take a large bowl and mix butter and jaggery powder or sugar together. Then, beat in egg, cinnamon powder, vanilla extract, and ginger.
  2. Use another bowl and combine barley flour, baking powder, and salt. Stir it into the creamed mixture we prepared before.
  3. Add toasted sesame seeds to it, and to make the dough soft add 1 tablespoon of milk.
  4. Combine all the ingredients together and knead a soft dough. Then, keep it in the fridge for an hour.
  5. After this, take a small amount of dough and give it the cookie shape. One can also roll the dough into a ¼ cm thick round shape and cut it using cookie cutters.
  6. Arrange the cookies on a greased sheet-lined baking tray.
  7. Preheat the oven to 180℃. Then, bake the cookies for 10-13 minutes.
  8. Remove the cookies from the oven and let them cool on a wire rack.
